Description
This recipe for vegan mashed sweet potatoes is like a whole holiday celebration in a bowl, but easy enough to make on a busy weeknight!
Ingredients
- 3 pounds sweet potatoes, peeled and cut into 1 inch cubes
- 3 tablespoons vegan butter
- 1/3 – 1/2 cup oat milk, or coconut milk (or other thick vegan milk)
- 2 cloves garlic, minced
- 1/2 teaspoon sea salt
- Pinch black pepper
- Extra pat vegan butter
- Chopped parsley, for garnish
Instructions
- In a 4 QT pot of boiling water, boil the sweet potatoes for 15-18 minutes, until fork tender.
- Drain the sweet potatoes completely for a few minutes to ensure all excess liquid is removed.
- Using a potato masher, mash the potatoes for a few seconds until broken up.
- In a small bowl, microwave the vegan milk and butter together for 45 seconds or until hot and melted.
- Add the hot vegan milk and butter mixture to the mashed potatoes along with the minced garlic and sea salt.
- Mash all the ingredients together until smooth and creamy. Add more milk if necessary to reach desired consistency.
- Serve with black pepper (optional), chopped parsley, and an extra pat of vegan butter. Enjoy!
Notes
- For a creamier texture, use coconut milk or another thick non-dairy milk.
- Adjust salt and pepper to taste based on dietary preferences.
- This dish can be made ahead and reheated with a splash of milk.
