Description

This recipe for vegan mashed sweet potatoes is like a whole holiday celebration in a bowl, but easy enough to make on a busy weeknight!


Ingredients

  • 3 pounds sweet potatoes, peeled and cut into 1 inch cubes
  • 3 tablespoons vegan butter
  • 1/31/2 cup oat milk, or coconut milk (or other thick vegan milk)
  • 2 cloves garlic, minced
  • 1/2 teaspoon sea salt
  • Pinch black pepper
  • Extra pat vegan butter
  • Chopped parsley, for garnish

Instructions

  1. In a 4 QT pot of boiling water, boil the sweet potatoes for 15-18 minutes, until fork tender.
  2. Drain the sweet potatoes completely for a few minutes to ensure all excess liquid is removed.
  3. Using a potato masher, mash the potatoes for a few seconds until broken up.
  4. In a small bowl, microwave the vegan milk and butter together for 45 seconds or until hot and melted.
  5. Add the hot vegan milk and butter mixture to the mashed potatoes along with the minced garlic and sea salt.
  6. Mash all the ingredients together until smooth and creamy. Add more milk if necessary to reach desired consistency.
  7. Serve with black pepper (optional), chopped parsley, and an extra pat of vegan butter. Enjoy!

Notes

  • For a creamier texture, use coconut milk or another thick non-dairy milk.
  • Adjust salt and pepper to taste based on dietary preferences.
  • This dish can be made ahead and reheated with a splash of milk.
