Description
This fresh and flavorful Marinated Tomatoes recipe combines sweet grape or cherry tomatoes with a vibrant mix of herbs, garlic, and vinegars, resulting in a versatile side dish or salad topper that’s perfect for summer gatherings or as a zesty addition to any meal.
Ingredients
Tomatoes
- 1 pound grape or cherry tomatoes, halved
Marinade
- 3 tablespoons olive oil
- 1 tablespoon red vinegar
- 1 tablespoon balsamic vinegar
- 1 to 2 cloves garlic, grated
- 1 tablespoon finely chopped basil
- 1/2 tablespoon finely chopped fresh parsley
- 1 teaspoon finely chopped fresh thyme
- Dash of crushed red pepper flakes
- Kosher salt, to taste
Instructions
- Combine ingredients: In a medium bowl, add the halved grape or cherry tomatoes, olive oil, red vinegar, balsamic vinegar, grated garlic, finely chopped basil, parsley, thyme, crushed red pepper flakes, and kosher salt. Stir gently until all ingredients are thoroughly combined and the tomatoes are well coated with the marinade.
- Marinate: Wrap the bowl tightly with plastic wrap and leave it out at room temperature for at least 30 minutes to allow the flavors to meld. For optimal flavor, let the tomatoes marinate for 1 to 2 hours, stirring once or twice during this time to evenly distribute the marinade. If marinating for longer than 2 hours, cover and refrigerate to keep the tomatoes fresh.
Notes
- Marinating at room temperature helps enhance the flavor but avoid exceeding 2 hours to prevent spoilage.
- This dish can be served as a side salad, bruschetta topping, or as a complement to grilled meats and cheeses.
- Adjust the crushed red pepper flakes according to your spice preference.
- Use fresh herbs for the best flavor; dried herbs will not provide the same brightness.
