These no-bake Lemon Protein Bars are bursting with fresh lemon flavor and packed with protein, fiber, and healthy fats. Perfect for a quick snack, post-workout bite, or a healthy sweet treat.
Ingredients
- ½ cup whey protein powder (unflavored or vanilla)
- 1 cup rolled oats
- 1 cup almond butter
- ¼ cup honey
- ½ cup shredded coconut
- 2 tablespoons coconut oil
- 1 tablespoon chia seeds
- 1 tablespoon lemon juice (or to taste)
- 1 tablespoon lemon zest
- ¼ cup white chocolate, melted (optional, for drizzling)
Instructions
- In a large food processor, combine protein powder and oats. Blend for about 1 minute until the oats are finely ground.
- Add shredded coconut, chia seeds, lemon zest, lemon juice, melted coconut oil, almond butter, and honey to the processor.
- Blend for about 30 seconds until the mixture is well combined.
- Check consistency: it should form a ball when pressed. If too crumbly, add a little water and blend again.
- Line a 9×5-inch loaf pan with parchment paper. Press the mixture firmly into the pan, smoothing the top.
- Chill in the refrigerator for 2 hours or in the freezer for 30 minutes until firm.
- Optional: Drizzle with melted white chocolate and sprinkle with extra lemon zest before slicing into 8 bars.
