Ingredients
Mochi Dough
- 1 cup glutinous rice flour (Mochiko)
- 1/4 cup sugar
- 1 1/4 cups water at room temperature
- 1/4 teaspoon salt
- 1 teaspoon lemon flavoring
- 1/4 teaspoon yellow gel food color
For Handling and Decoration
- 1/2 cup cornstarch
- Light corn syrup
- 10-12 orange mini chips (for beak)
- 20-24 black nonpareils or black buttercream (for eyes)
- 20-24 orange flower sprinkles (for feet)
- 10-12 mini cupcake liners
Instructions
- Mix Ingredients: Combine glutinous rice flour, sugar, water, salt, lemon flavoring, and yellow gel food color in a medium microwave-safe bowl. Stir well with a rubber spatula until smooth and no lumps remain, scraping the sides to collect all mixture.
- Initial Cooking: Microwave the mixture at full power (100%) for 2 minutes. Carefully remove and stir thoroughly; the dough will be thick and sticky.
- Continue Cooking: Return the bowl to the microwave for another 2 minutes. Observe the dough inflate and deflate as it cooks. If it hasn’t inflated during the last minute, microwave for an additional 1 minute until dough inflates.
- Prepare Work Surface: Sprinkle half of the cornstarch onto a cutting board. Remove the hot dough from the microwave and scrape it onto the cornstarch.
- Shape Dough: Using cornstarch-coated hands (be cautious of heat), pat and stretch the sticky dough, flattening it evenly. Cut into 10-12 pieces. Pinch each piece’s edges and form into balls. Place each ball into mini cupcake liners, brushing off excess cornstarch with a pastry brush.
- Decorate: Use light corn syrup as an adhesive to attach black nonpareils or black buttercream as eyes, orange mini chips as beaks, and orange flower sprinkles as feet on each mochi chick.
- Serve: Serve the Lemon Mochi Chicks immediately for the best chewy texture and freshness.

- Handle the hot mochi dough carefully as it can be very sticky and warm right after microwaving.
