Ingredients
- 2¾ cups all-purpose flour
- ½ teaspoon salt
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- ⅓ cup brown sugar
- 1 large egg
- 1 cup cottage cheese, blended
- 3 tablespoons fresh lemon juice
- 2 teaspoons lemon zest
- ½ cup unsalted butter, very cold
- Egg Wash:
- 1 egg
- 1 teaspoon water
- Optional Glaze:
- 1 tablespoon lemon juice
- 3 tablespoons powdered sugar
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. Place the butter in the freezer for 10 minutes to chill.
- In a large bowl, mix the flour, salt, baking powder, baking soda, and brown sugar.
- In a separate bowl, whisk the egg, then mix in the blended cottage cheese, lemon juice, and lemon zest.
- Add the wet mixture to the dry ingredients and mix slowly until just combined.
- Grate the cold butter directly into the dough, kneading gently as you go to evenly distribute the butter.
- Form the dough into a ball and roll it out on a floured surface into an 8-inch circle. Cut into 8 triangles and carefully transfer them to the prepared baking sheet.
- Make the egg wash by whisking together the egg and water. Brush over the tops of the scones.
- Bake for 18–20 minutes or until the tops are lightly golden. Let cool on the baking sheet.
- Optional: Mix lemon juice with powdered sugar to create a glaze and drizzle over the cooled scones before serving.

- Use very cold butter for flakier scones — freezing before grating helps incorporate it evenly.
