Ingredients
Crepe Batter
- 3 large egg whites
- 5 tbsp (31g) whey protein powder
- 1/2 tsp vanilla extract
- 1 tbsp powdered sweetener
For Cooking
- 1 tsp butter (divided, for frying)
Instructions
- Prepare the batter: In a mixing bowl, combine the egg whites, whey protein powder, vanilla extract, and powdered sweetener. Blend thoroughly for about 1 minute until the mixture is fluffy and well combined, ensuring no lumps remain.
- Heat the pan and add batter: Melt 1/2 teaspoon of butter in a non-stick frying pan or skillet (approximately 20cm in diameter) over medium heat. Pour in half of the batter, tilting and rotating the pan immediately to spread the batter evenly, covering the entire bottom surface.
- Cook the first side: Let the crepe cook for about 45 seconds on medium heat, or until the underside becomes golden brown.
- Flip and cook the second side: Using a wide spatula, carefully flip the crepe over and cook the other side for an additional 45 seconds until golden and cooked through.
- Repeat the process: Add the remaining 1/2 teaspoon butter to the pan, melt it, then cook the second crepe with the remaining batter in the same manner.
- Serve: Once both crepes are cooked, serve warm with your favorite keto-friendly toppings or enjoy them plain.
