Ingredients
Hot Chocolate Base
- 2.1 oz (60g) good quality dark chocolate (72% cacao recommended)
- 1 ½ cups plus 2 tablespoons milk of choice (dairy-free options like almond or soy milk preferred)
- 1 ½ tablespoons unsweetened cocoa powder
- 3 teaspoons cornstarch
- Small pinch of salt
- Optional: additional sugar to taste
Instructions
- Mix Cornstarch and Milk: Add 2 tablespoons of milk to a small bowl with the cornstarch. Whisk together thoroughly until the mixture is smooth and free of any lumps. Set aside to use later.
- Heat Milk and Melt Chocolate: Pour the remaining milk into a small saucepan and break the dark chocolate into smaller pieces before adding it to the saucepan. Warm the mixture gently over the lowest heat on the stovetop, stirring continuously with a whisk to fully melt the chocolate without burning.
- Add Cocoa Powder and Salt: Once the milk is heated through and the chocolate has melted, stir in the cocoa powder and a small pinch of salt. Keep whisking gently to combine all ingredients smoothly.
- Sweeten if Desired: Taste the mixture, and if you prefer a sweeter drink, add your chosen amount of sugar now. Stir until fully dissolved.
- Incorporate Cornstarch Mixture and Thicken: Pour in the cornstarch-milk mixture slowly while continuously whisking to prevent clumps. Continue whisking gently over the lowest heat until the hot chocolate thickens to a luscious, creamy consistency.
- Serve and Enjoy: Once thickened, pour the Italian hot chocolate into your favorite cups. Serve immediately while warm and enjoy the decadent and velvety experience.
Notes
- Use good quality dark chocolate with at least 70% cacao for the best rich flavor.
- Adjust the sweetness to your taste by adding sugar gradually after tasting.
- If using dairy-free milk, almond or soy milk work best due to their creaminess.
- Whisk continuously when adding cornstarch to avoid lumps forming.
- Serve immediately as the hot chocolate can thicken further as it cools.
