These Italian Beef Sandwiches feature tender, juicy shredded chuck roast slow-cooked with zesty banana peppers and Italian dressing seasoning. Piled high on sandwich rolls with melted provolone cheese, they’re perfect for a hearty, flavorful meal or game day crowd-pleaser.
Ingredients
- 3–4 pound chuck roast
- 2 packets Italian dressing seasoning mix (not Italian herb seasoning)
- 16 ounces mild banana peppers, with juice (from a jar)
- 8 sandwich rolls
- 16 slices provolone cheese
- Extra banana peppers, for serving
Instructions
- Place the chuck roast into a slow cooker. Sprinkle the Italian dressing seasoning over the meat, then pour in the banana peppers along with their juice.
- Cover and cook on low for 8 hours or high for 4 hours, until the beef is very tender and easily shreds with a fork.
- Shred the beef using two forks and stir it back into the juices to soak up flavor.
- Split the sandwich rolls and layer with shredded beef and two slices of provolone cheese per sandwich.
- Optional: Spoon a little of the cooking liquid into small bowls for dipping.
- Top with additional banana peppers if desired, and serve warm.
Notes
- Use the dry seasoning packets made for Italian salad dressing—found near the bottled dressings at the store.
- Cooking time may vary depending on your slow cooker. If the meat is still tough, continue cooking until it easily shreds.
- You can toast the rolls under the broiler with the cheese for a melty, crisp finish.
- Leftovers keep well in the fridge and can be reheated with the juices.
