Description

Enjoy a deliciously creamy and healthy Indian Overnight Oats recipe infused with aromatic cardamom and saffron, topped with crunchy pistachios. This breakfast dish combines the convenience of overnight preparation with the rich flavors reminiscent of traditional Kulfi ice cream, making it a perfect nutritious start to your day.

Ingredients

Overnight Oats Base

  • 1 cup Rolled oats
  • 1 cup Milk, preferably full fat
  • 2 tablespoons sugar
  • 2 teaspoons Chia seeds
  • ¼ teaspoon cardamom powder
  • 1 pinch salt
  • 1 pinch saffron, crushed with your fingertips

Topping

  • 3 tablespoons raw pistachios, chopped

Instructions

  1. Combine Ingredients: In a mason jar or a container, add rolled oats, milk, sugar, chia seeds, cardamom powder, salt, and crushed saffron. Stir thoroughly to mix all ingredients well.
  2. Refrigerate: Cover the jar or container tightly and refrigerate for at least 6 hours or up to 2 days to allow the oats to soak and absorb the flavors fully.
  3. Mix Pistachios and Taste: Before serving, stir in half of the chopped pistachios into the soaked oats. Taste the mixture; if you prefer it sweeter, add more sugar accordingly and mix well.
  4. Serve: Enjoy your Indian Overnight Oats by topping with the remaining chopped pistachios for a delightful crunch and presentation.

Notes

  • Oats: Use rolled or old fashioned oats as instant oats can become mushy during long soaking.
  • Saffron: If you don’t have saffron, simply omit it; the oats will retain a pale color but remain flavorful.
  • Sugar: Adjust the amount of sugar to your taste preference for sweetness.
