Description

This simple and delicious pearl couscous recipe provides a quick and easy way to prepare tender, toasted couscous with a light, lemony finish. Perfect as a side dish or base for various meals, it features toasted pearl couscous cooked in water, seasoned with kosher salt, and optionally enhanced with fresh parsley and lemon zest for a bright flavor.

Ingredients

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 cup pearl couscous
  • 1 ½ cups water
  • Kosher salt, to taste
  • ¼ cup chopped fresh parsley (optional)
  • Zest of 1 lemon (optional)

Instructions

  1. Toast the couscous: In a medium saucepan, heat about 2 tablespoons of extra virgin olive oil over medium-high heat until it just begins to shimmer. Add the pearl couscous and stir constantly, toasting the couscous until the pearls turn a golden brown, developing a nutty flavor.
  2. Boil the couscous: Bring 1 ½ cups of water to a boil separately. Pour the boiling water into the saucepan with the toasted couscous, season with kosher salt, and return the saucepan to the stove. Bring the mixture back to a boil, then reduce the heat to low, cover the pot, and simmer for about 14 minutes or until the pearl couscous is tender and has absorbed the water.
  3. Season and serve: Remove the saucepan from heat and fluff the couscous with a fork. Taste and adjust the seasoning with additional salt if needed. Optionally, stir in the chopped fresh parsley and lemon zest to add a fresh, vibrant flavor. Toss well and serve warm as a versatile side dish.

Notes

  • Toasting the pearl couscous first enhances its nutty flavor and adds a pleasant texture.
  • Use fresh kosher salt for best seasoning results; adjust according to your taste.
  • The optional parsley and lemon zest add brightness but can be omitted if unavailable.
  • Pearl couscous can also be cooked in broth for added flavor instead of water.
  • Serve this pearl couscous alongside grilled vegetables, meats, or as a base for salads.
