Ingredients
Chicken and Sauce
- 2 pounds chicken breast
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1 cup BBQ sauce
- 1/4 cup honey
Base and Toppings
- 1 cup long grain rice
- 1 cup black beans (drained and rinsed)
- 1 cup corn (canned or frozen)
- 1 head romaine lettuce (chopped)
- 1/2 cup shredded cheddar cheese
- 1/4 cup pickled onions
- 1/4 cup chopped cilantro
- 1/4 cup ranch dressing
Instructions
- Prepare the rice: Cook the long grain rice following the package instructions until fluffy and tender. Set aside.
- Season the chicken: Cut the chicken breast into bite-sized pieces, about 1 inch. Season evenly with salt, pepper, paprika, and garlic powder to infuse flavor.
- Cook the chicken: Heat a large skillet over medium-high heat and add the olive oil. When hot, add the seasoned chicken bites. Let them cook undisturbed for 3-4 minutes to develop a sear, then stir and continue cooking, stirring occasionally, until the chicken is cooked through and reaches an internal temperature of 165˚F, about 3-5 more minutes. Remove the skillet from heat.
- Make the honey BBQ sauce: In a bowl, whisk together the BBQ sauce and honey until smooth and well combined.
- Coat the chicken: Pour the honey BBQ sauce over the cooked chicken in the skillet and stir gently until every piece is evenly coated with the sauce.
- Heat the beans and corn: Warm the black beans and corn either in a microwave or on the stovetop until heated through.
- Assemble the bowls: Add a scoop of cooked rice to one side of each bowl and place chopped romaine lettuce on the other side.
- Add toppings: Spoon black beans and corn onto the bowl. Sprinkle shredded cheddar cheese and top with pickled onions for a tangy bite.
- Finish and garnish: Drizzle ranch dressing over the assembled ingredients and sprinkle chopped cilantro for freshness and flavor.
Notes
- Pickled onions can be store-bought or homemade; they add a tangy crunch that complements the sweetness of the BBQ sauce.
- Use fresh or frozen corn—make sure to thaw if frozen.
- For spicier bowls, consider adding a dash of cayenne pepper or hot sauce to the chicken seasoning or ranch dressing.
- Leftover bowls can be refrigerated for up to 3 days; reheat the chicken and beans/corn before serving.
