Ingredients

Chicken and Sauce

  • 2 pounds chicken breast
  • 2 tablespoons olive oil

  • 1 cup BBQ sauce
  • 1/4 cup honey

Instructions

  1. Prepare the rice: Cook the long grain rice following the package instructions until fluffy and tender. Set aside.
  2. Season the chicken: Cut the chicken breast into bite-sized pieces, about 1 inch. Season evenly with salt, pepper, paprika, and garlic powder to infuse flavor.
  3. Cook the chicken: Heat a large skillet over medium-high heat and add the olive oil. When hot, add the seasoned chicken bites. Let them cook undisturbed for 3-4 minutes to develop a sear, then stir and continue cooking, stirring occasionally, until the chicken is cooked through and reaches an internal temperature of 165˚F, about 3-5 more minutes. Remove the skillet from heat.
  4. Make the honey BBQ sauce: In a bowl, whisk together the BBQ sauce and honey until smooth and well combined.
  5. Coat the chicken: Pour the honey BBQ sauce over the cooked chicken in the skillet and stir gently until every piece is evenly coated with the sauce.
  6. Heat the beans and corn: Warm the black beans and corn either in a microwave or on the stovetop until heated through.
  7. Assemble the bowls: Add a scoop of cooked rice to one side of each bowl and place chopped romaine lettuce on the other side.
