Ingredients

Filling

  • ¼ cup (2oz/57g) butter
  • 4 apples, peeled, cored and diced small
  • ⅔ cup (4oz/115g) brown sugar
  • 2 teaspoons cinnamon
  • ½ teaspoon salt
  • Juice of 1 lemon
  • 3 teaspoons cornflour
  • 1 tablespoon water

Pastry and Topping

  • 2 x recipe Easy Puff Pastry (or store bought puff pastry)
  • Egg wash (1 egg beaten with 1 tablespoon water)
  • Cinnamon sugar for dusting


Instructions

  1. Preheat Oven and Prepare Baking Sheets: Preheat your oven to 400°F (200°C) and line two baking sheets with parchment paper to prevent sticking and ensure even baking.
  2. Cook Apple Filling: In a shallow saucepan over medium heat, combine butter, peeled and diced apples, brown sugar, cinnamon, salt, and lemon juice. Cook gently, stirring occasionally, until most of the liquid reduces and the apples soften, about 8-10 minutes.
  3. Thicken Filling: In a small bowl, mix the cornflour and water to create a slurry. Stir this into the cooked apple mixture, and cook for an additional 2 minutes while stirring to thicken the filling. Remove from heat and allow to cool completely.
  4. Roll Out Puff Pastry: On a floured surface, roll out the puff pastry to approximately ⅛ inch thickness. Cut the rolled pastry into eight rectangles measuring about 4.5×6 inches (12×15 cm). Transfer the rectangles to the prepared baking sheets.
  5. Fill and Seal Pies: Place 1-2 heaped teaspoons of the cooled apple filling onto the center of each pastry rectangle. Brush the edges with egg wash or milk, fold the pastry over the filling, and press the edges together to seal. Use the tines of a fork to crimp the edges securely.
  6. Vent, Glaze, and Add Sugar: Cut three small slits on top of each pie to allow steam to escape. Brush the tops with egg wash or milk and sprinkle generously with cinnamon sugar.
  7. Bake: Place the pies in the preheated oven and bake for 25-30 minutes, or until the puff pastry is fully puffed and golden brown.
