Description

Ingredients

3 cups white sugar

1/4 cup corn syrup

1/4 teaspoon salt

3/4 cup water

2 teaspoons vanilla extract

1 cup confectioners’ sugar, for dusting


Instructions

  1. Generously coat a 9×13-inch dish with cooking spray.
  2. In a large saucepan, combine sugar, corn syrup, salt, and water. Heat until mixture reaches 234–240°F (112–116°C), or until a small drop forms a soft ball in cold water.
  3. Remove from heat and beat with an electric mixer until stiff peaks form, about 10–12 minutes.
  4. Stir in vanilla extract.
  5. Pour mixture into prepared pan and spread evenly.
  6. Chill in the refrigerator for 8 hours or overnight.
  7. Loosen edges with a knife, dust with confectioners’ sugar, and turn onto a waxed paper-lined surface. Dust with more sugar and cut into squares.
