Ingredients

Cheese Cracker Dough

  • 8 ounces finely grated sharp cheddar cheese
  • 1 1/4 cups all-purpose flour (160g)
  • 4 tablespoons cold unsalted butter, cut into small pieces
  • 1/4 cup plain yogurt


Instructions

  1. Combine dry ingredients: Pulse the grated sharp cheddar, all-purpose flour, and cold unsalted butter in a food processor several times until the mixture resembles coarse crumbs.
  2. Add yogurt and form dough: Add the plain yogurt to the mixture and pulse again for about a minute. The dough will be crumbly but should hold together when pressed between your fingers.
  3. Chill the dough: Remove the dough from the food processor and shape it into a log. Wrap the log tightly in plastic wrap and refrigerate for at least 30 minutes. This chilling step makes the dough easier to roll out and slice. If refrigerated for longer, allow the dough to sit at room temperature for a few minutes before rolling.
  4. Preheat oven and prepare workstation: Preheat your oven to 350°F (175°C). Line your work surface with a sheet of parchment paper and lightly dust it with flour to prevent sticking.
  5. Roll out the dough: Place the chilled dough in the center of the parchment paper. Roll it out evenly from the center outward, turning the dough occasionally, until about 1/8 to 1/4 inch thick is achieved.
  6. Cut the crackers: Using a pizza cutter or fluted pastry wheel, cut the dough into 1-inch squares. Trim off any uneven edges to get perfect squares. Transfer the entire parchment paper with the cut dough onto a cookie sheet and slightly separate the crackers so they are not touching.
