This Homemade BBQ Chicken Pizza combines a crispy, flavorful pizza crust with tangy barbecue sauce, tender cooked chicken, melted mozzarella and smoked gouda cheeses, and sharp red onions, finished with fresh cilantro for a tasty, crowd-pleasing meal perfect for any occasion.
Ingredients
Pizza Dough
- 1/2 recipe homemade pizza dough (or 1 lb. store-bought pizza dough)
- 1 Tablespoon (15ml) olive oil, divided
- 1 Tablespoon (8g) cornmeal
Toppings
- 1/3 cup + 2 Tablespoons (130g) your favorite barbecue sauce
- 1 cup chopped or shredded cooked chicken (about one 8-ounce breast)
- 2/3 cup (70g) shredded mozzarella cheese
- 2/3 cup (70g) shredded smoked gouda cheese
- 1/2 small red onion, thinly sliced
- 1 Tablespoon chopped fresh cilantro, for topping (or use basil)
Instructions
- Prepare Dough: Prepare pizza dough through step 3 of your homemade dough recipe. If using store-bought frozen dough, ensure it is fully thawed before proceeding.
- Preheat Oven: Preheat your oven to 475°F (246°C). Allow the oven to heat for at least 15–20 minutes. If using a pizza stone, place it inside to preheat as well. Lightly grease a large baking sheet or pizza pan with 1/2 Tablespoon olive oil and sprinkle with cornmeal for extra crust crunch and flavor.
- Shape the Dough: Punch down the dough to release air bubbles. Divide in half and freeze one portion if desired. On a lightly floured surface, flatten the dough into a disc. Place on prepared pan and stretch into a 12-inch circle about 1/2-inch thick, creating a lip around the edges by pinching the dough to form a rim. If dough resists stretching, let rest covered for 5–10 minutes before continuing.
- Rest Dough: If using a pizza stone, place shaped dough on a cornmeal-dusted baker’s peel. Cover dough lightly with plastic wrap or a clean kitchen towel and allow it to rest while preparing toppings.
- Prepare Toppings: Press small dents into the dough surface with your fingers to prevent bubbling during baking. Brush remaining olive oil over the dough. Evenly spread 1/3 cup (about 95g) BBQ sauce on top. Toss cooked chicken with the remaining BBQ sauce and scatter it evenly over the sauce. Top with shredded mozzarella and smoked gouda cheeses, and thinly sliced red onion.
- Bake Pizza: Place the pizza in the preheated oven and bake for 14–15 minutes or until the crust is golden brown and cheese is melted and bubbly.
- Finish and Serve: Remove the pizza from the oven and sprinkle with fresh chopped cilantro. Slice while hot and serve immediately. Store leftovers tightly covered in the refrigerator for up to 5 days or freeze for longer storage.
Notes
- If the dough shrinks back when stretching, allow it to rest covered for 5–10 minutes to relax the gluten before trying again.
- Using a pizza stone helps achieve a crispier crust but is optional.
- Leftover pizza can be reheated in a conventional oven or toaster oven for best results to maintain crust crispness.
- Freezing half the dough allows for easy future pizza nights without making dough from scratch again.
