Ingredients
Caramelized Onions
- 1 tablespoon butter
- 1 large yellow onion, very thinly sliced
- 1/2 teaspoon salt
- 1/2 teaspoon sugar
Dip Base
- 3/4 cup cottage cheese
- 1/4 cup plain Greek yogurt
- 1/3 cup mayonnaise
- 1/2 teaspoon balsamic vinegar
- 1/2 teaspoon vegetarian Worcestershire sauce
- 1/2 teaspoon garlic powder
Instructions
- Caramelize the Onions: Heat 1 tablespoon of butter in a large skillet over medium heat. Once melted, add the very thinly sliced onions and toss to coat in the butter. Sprinkle with 1/2 teaspoon salt and 1/2 teaspoon sugar, stirring well to distribute evenly.
- Cook Onions to Caramelize: Maintain medium heat and cook the onions for 20 minutes, stirring occasionally. If the pan looks dry or the onions start to stick, add a splash of water to prevent burning.
- Finish Caramelization: Lower the heat to medium-low and cook the onions for an additional 10-15 minutes until they turn a deep brown color. Remove from heat and allow to cool slightly.
- Chop the Onions: Transfer the caramelized onions to a cutting board and finely chop them. Set aside. This step can be done a day ahead if desired.
- Prepare the Dip Base: In a blender, food processor, or with an immersion blender, blend 3/4 cup cottage cheese until smooth. Add 1/4 cup plain Greek yogurt, 1/3 cup mayonnaise, 1/2 teaspoon balsamic vinegar, 1/2 teaspoon vegetarian Worcestershire sauce, and 1/2 teaspoon garlic powder. Blend until fully combined and smooth.
- Combine Ingredients: Transfer the blended base to a bowl and stir in the chopped caramelized onions until evenly mixed.
- Chill the Dip: Cover the bowl and refrigerate for about 30 minutes to allow the flavors to meld. The dip can be prepared up to 2 days in advance.
Notes
- For best flavor, caramelize the onions slowly to avoid burning and develop deep sweetness.
- This dip can be stored covered in the refrigerator for up to 2 days.
- If the pan dries out during caramelization, adding water prevents the onions from sticking or burning.
- Vegetarian Worcestershire sauce is recommended; regular Worcestershire may contain anchovies.
- Use low-fat or fat-free cottage cheese and yogurt for a lighter version.
