- 1/3 cup pure maple syrup
- 1/3 cup coconut oil, measured solid
- 2 teaspoons vanilla extract
Dry Ingredients
- 3 tablespoons raw cacao powder
- 1/2 teaspoon salt
- 1 3/4 cups quick oats
Instructions
- Combine Wet Ingredients: In a saucepan over medium heat, combine the peanut butter, maple syrup, salt, and solid coconut oil. Stir continuously until the mixture is melted and well combined to create a smooth base.
- Add Flavorings: Stir in the vanilla extract and raw cacao powder until the mixture is evenly blended and chocolatey.
- Incorporate Oats: Remove the saucepan from heat and stir in the quick oats thoroughly to combine them with the chocolate peanut butter mixture.
- Shape Cookies: Using a mini cookie scoop or spoon, drop spoonfuls of the cookie batter onto a wax paper-lined baking sheet. Flatten the tops gently if you prefer flatter cookies.
- Chill and Set: Place the cookies in the refrigerator and chill until they are firm and hardened, which usually takes about 10 minutes. Once set, store the cookies in an airtight container refrigerated or frozen.
