This Healthy McChicken Recipe is a high-protein, better-for-you version of the fast-food favorite. Made with lean chicken breast, a crunchy protein-packed coating, and a light creamy sauce, each burger packs over 30g of protein while keeping calories in check. Perfect for meal prep, fast lunches, or satisfying dinner cravings the healthy way.
Ingredients
400 g chicken breast, chopped (or ground chicken)
1/2 tbsp yellow mustard (or 1/2 tsp mustard powder)
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp paprika
20 g soy or whey protein crisps (or breadcrumbs)
15 g all-purpose or cake flour
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp mustard powder
1/4 tsp paprika
30 g light mayonnaise
70 g plain yogurt
1/2 tsp yellow mustard
1/4 tsp onion powder
1 tbsp white vinegar
Salt and pepper, to taste
Shredded iceberg lettuce
4 low-calorie brioche burger buns (or buns of choice)
Olive oil spray
Instructions
- In a food processor, blend chopped chicken breast or use pre-ground chicken. Mix in mustard, salt, pepper, garlic powder, onion powder, and paprika. Form into 4 patties using wet hands.
- Crush protein crisps or use breadcrumbs. Mix with flour, baking powder, salt, pepper, garlic powder, onion powder, mustard powder, and paprika.
- Whisk together mayonnaise, yogurt, mustard, onion powder, vinegar, salt, and pepper to make the McChicken sauce.
- Coat each chicken patty in the dry mixture, pressing to adhere. Spray both sides with olive oil spray.
- Cook in air fryer at 190°C (375°F) for 16–18 minutes or oven at 220°C (425°F) for 18–22 minutes, flipping halfway through.
- (Optional) Wrap buns in damp paper towel and microwave for 10–15 seconds to steam.
- Assemble burgers: Spread McChicken sauce on buns, add lettuce and cooked patty, then top with the bun. Serve hot.

- Use ground turkey for a leaner option.
- Steam buns for a fluffier texture similar to fast food.
- Use tamari and gluten-free buns for a gluten-free version.
