Ingredients
- 1 cup chocolate chips
- 1/4 cup coconut oil
- 3/4 cup coconut sugar
- 2 eggs
- 1 cup almond flour
- 1/4 cup cocoa powder
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup chocolate chips (optional, for topping)
Instructions
- Preheat the oven to 350°F (177°C) and grease a 6-inch cast iron skillet or an 8×8 inch baking pan.
- In a small bowl, melt 1 cup of chocolate chips with the coconut oil in 30-second increments in the microwave, stirring in between until fully melted. Let cool slightly.
- In a large bowl, combine almond flour, cocoa powder, baking powder, and salt. Stir to combine.
- Whisk the eggs and coconut sugar into the cooled chocolate mixture until smooth.
- Pour the wet mixture into the dry ingredients and mix until well combined.
- Transfer the batter to the prepared skillet or baking pan. Top with additional chocolate chips if desired.
- Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
Notes
- Let the melted chocolate cool slightly before adding eggs to prevent scrambling.
- Use dairy-free chocolate chips to keep the recipe fully dairy-free.
