  • 1 tbsp Olive oil
  • 1 small Onion, chopped
  • 4 cloves Garlic, peeled and chopped
  • 1 tsp fresh grated ginger (or ½ tsp dried ground ginger)
  • 2 tsp Garam masala
  • 1.5 tsp Curry powder
  • 1 tsp Coriander
  • 1 tsp Turmeric

Main Ingredients

  • 1 pound Ground turkey (minced)
  • 2 large Sweet potatoes, peeled and chopped into cubes
  • 15 oz Garbanzo beans (chickpeas), drained
  • 14 oz canned tomatoes, chopped or pureed
  • 2 cups Chicken broth
  • Salt and pepper, to taste
  • 1 cup Frozen peas


Instructions

  1. Sauté Aromatics and Spices: In a large pan or wok, heat olive oil over medium heat. Add the chopped onion, garlic, fresh ginger, garam masala, curry powder, coriander, and turmeric. Cook for about 1 minute until the mixture becomes aromatic, stirring frequently to prevent burning.
  2. Brown the Ground Turkey: Add the ground turkey to the pan with the aromatics. Cook for approximately 2 minutes, stirring occasionally until the turkey is about halfway browned and starting to firm up.
  3. Add Vegetables, Beans, and Liquids: Pour in the sweet potato cubes, garbanzo beans, canned tomatoes, and chicken broth. Season with salt and pepper to taste. Stir gently to combine all ingredients evenly.
  4. Simmer the Curry: Cover the pan with a lid and let the curry cook on medium heat or medium simmer for around 15 minutes. During this time, the sweet potatoes will soften, and the sauce will reduce by half, thickening the curry.
  5. Finish with Peas: Remove the lid and stir in the frozen peas. Cook for an additional 2-3 minutes until the peas are fully thawed and vibrant green, blending nicely into the curry.
