Ingredients
Beef and Veggie Mix
- 1 lb lean ground beef
- 1 tsp chili powder
- 1 tsp garlic powder
- ½ tsp onion powder
- 1 tsp paprika
- 1 tsp cumin
- ½ tsp salt
- ½ tsp cayenne pepper
- 1 small red bell pepper, diced
- 1 small green bell pepper, diced
- 2 Tbsp tomato paste
- ¼ cup onions (red or yellow), chopped
- ¼-⅓ cup water
Jalapeño Cilantro Sauce
- ⅓ cup sour cream
- 1 jalapeño, sliced, seeds discarded for mild flavor
- ½ tsp salt
- ½ tsp cumin
- ⅓ cup cilantro
- 1 Tbsp fresh squeezed lime juice
Additional Ingredients for Assembly
- ½ cup long grain rice, uncooked (*use more as needed)
- 1 (15 oz) can black beans, drained
- 1 (15 oz) can corn kernels, drained
- ½ cup tomatoes, diced
- ¼ cup shredded cheese (*more as needed)
Instructions
- Cook the Rice: Start cooking the rice according to the package instructions, which usually takes around 20 minutes. This will ensure it’s ready to serve with the beef mixture.
- Cook the Ground Beef: Heat a large deep skillet over medium-high heat. Add the lean ground beef and cook for about 4 minutes until browned. Drain excess grease using paper towels, leaving a little grease to help thicken and flavor the sauce.
- Add Seasonings and Vegetables: Stir in chili powder, paprika, cumin, salt, pepper, cayenne pepper, onion powder, and garlic powder. Then add tomato paste, chopped onions, diced red and green bell peppers, and water or broth to the skillet. Cover and simmer on low (lowest heat setting) for 6-8 minutes. If the mixture is too watery, simmer uncovered to reduce liquid.
- Prepare for Jalapeño Cilantro Sauce: While the beef mixture simmers, prepare the sauce by adding sour cream, lime juice, cilantro, sliced jalapeño (without seeds for mild heat), cumin, and salt to a small blender or food processor. Blend until mostly smooth.
- Assemble the Burrito Bowls: Layer each serving starting with a scoop of cooked rice, then the beef and vegetable mixture, followed by corn kernels, black beans, diced tomatoes, and shredded cheese.
