Ingredients
Beef Mixture
- 1 pound lean ground beef
- 1 envelope taco seasoning
- ¼ cup water
Cheese Sauce & Rice
- 15 ounces can Rico’s nacho cheese sauce
- 2 cups prepared Mexican rice

- 2 Tablespoons mayonnaise
- 1 Tablespoon chipotle sauce
- Sour cream, for topping
- Tortilla strips, for topping
Burritos
- 4 burrito size tortillas
- 2 cups shredded Colby jack cheese (divided)
Instructions
- Brown the beef: In a medium skillet over medium heat, brown the ground beef until fully cooked. Drain the excess fat.
- Season the beef: Add the taco seasoning and ¼ cup water to the drained beef. Cook for about 5 minutes, stirring occasionally, until the sauce thickens slightly.
- Prepare the chipotle mayo: Mix together the mayonnaise and chipotle sauce in a small bowl and set aside.
- Assemble the burritos: Lay out each tortilla and add a quarter of the nacho cheese sauce, followed by a quarter of the seasoned ground beef, and ½ cup of prepared Mexican rice.
- Add the chipotle mayo: Evenly distribute the chipotle mayonnaise mixture over each burrito filling.
- Top and fold: Add a dollop of sour cream and a generous amount of tortilla strips on top of each filling. Fold the burritos securely.
- Prepare to grill: Heat a non-stick skillet over medium heat and sprinkle ¼ cup of shredded Colby jack cheese in the pan.
- Grill the first side: Place one burrito seam side down on top of the melted cheese. Cook until the cheese browns and sticks to the burrito, about 2-3 minutes.
- Flip and grill the other side: Use a spatula to lift the burrito, sprinkle another ¼ cup of cheese into the pan, then flip the burrito onto the new cheese. Cook until the second side is browned and crispy.
