Description

This Grilled Cheese Burrito recipe is a delicious Taco Bell copycat that combines seasoned ground beef, Mexican rice, and creamy nacho cheese sauce wrapped in a tortilla, then grilled to perfection with melted Colby jack cheese for a crispy, cheesy crust. Perfect for a satisfying and flavorful meal in just 25 minutes.

Ingredients

Beef Mixture

  • 1 pound lean ground beef
  • 1 envelope taco seasoning
  • ¼ cup water

Cheese Sauce & Rice

  • 15 ounces can Rico’s nacho cheese sauce
  • 2 cups prepared Mexican rice

Sauces & Toppings

  • 2 Tablespoons mayonnaise
  • 1 Tablespoon chipotle sauce
  • Sour cream, for topping
  • Tortilla strips, for topping

Burritos

  • 4 burrito size tortillas
  • 2 cups shredded Colby jack cheese (divided)

Instructions

  1. Brown the beef: In a medium skillet over medium heat, brown the ground beef until fully cooked. Drain the excess fat.
  2. Season the beef: Add the taco seasoning and ¼ cup water to the drained beef. Cook for about 5 minutes, stirring occasionally, until the sauce thickens slightly.
  3. Prepare the chipotle mayo: Mix together the mayonnaise and chipotle sauce in a small bowl and set aside.
  4. Assemble the burritos: Lay out each tortilla and add a quarter of the nacho cheese sauce, followed by a quarter of the seasoned ground beef, and ½ cup of prepared Mexican rice.
  5. Add the chipotle mayo: Evenly distribute the chipotle mayonnaise mixture over each burrito filling.
  6. Top and fold: Add a dollop of sour cream and a generous amount of tortilla strips on top of each filling. Fold the burritos securely.
  7. Prepare to grill: Heat a non-stick skillet over medium heat and sprinkle ¼ cup of shredded Colby jack cheese in the pan.
  8. Grill the first side: Place one burrito seam side down on top of the melted cheese. Cook until the cheese browns and sticks to the burrito, about 2-3 minutes.
  9. Flip and grill the other side: Use a spatula to lift the burrito, sprinkle another ¼ cup of cheese into the pan, then flip the burrito onto the new cheese. Cook until the second side is browned and crispy.
  10. Repeat and serve: Repeat the grilling process with the remaining burritos. Serve warm and enjoy your cheesy grilled burritos!

Notes

  • You can substitute the ground beef for ground turkey or plant-based meat for a lighter or vegetarian option.
  • For extra spice, add jalapeño slices or a dash of hot sauce inside the burritos.
  • The tortilla strips add a great crunch; substitute with crushed tortilla chips if preferred.
  • Make sure the skillet is not too hot to avoid burning the cheese before it crisps properly.
  • Leftovers can be wrapped tightly and refrigerated for up to 2 days; reheat in a skillet to retain crispiness.
