Ingredients
- 1 Tbsp olive oil
- 1 medium-sized onion, sliced or diced
- 1 (9 oz / 250 g) medium potato, diced
- 2 1/2 cups (600 ml) low-sodium vegetable broth or water
- 4 cups (500 g) frozen or fresh peas
- 10 fresh mint leaves
- Salt and pepper, to taste
- Optional garnish:
- 2–3 Tbsp cooked peas (reserved before blending)
- 1 Tbsp pine nuts
- Extra virgin olive oil, for drizzling
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and sauté for about 5 minutes, until soft and translucent.
- Add diced potato and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 10 minutes or until potatoes are soft.
- Add peas and simmer for 4 more minutes. Do not overcook to preserve color and flavor.
- Turn off the heat. Add salt, pepper, and mint leaves. Let cool slightly before blending.
- Blend the soup using an immersion blender or transfer in batches to a stand blender. Add extra broth or water if needed to thin the soup to your desired consistency.
- Return blended soup to the pot and adjust seasoning if needed.
- Serve hot with a drizzle of extra virgin olive oil, a few cooked peas, and pine nuts, if desired.

- You can use fresh or frozen peas. Weights provided are based on frozen peas.
