Ingredients
Pizza Base
- 1 recipe pizza dough
- cornmeal or semolina flour, for dusting
Toppings
- 1/2 cup chimichurri sauce
- 1/2 cup fresh mozzarella, partially frozen and grated
- 1/2 cup fresh smoked mozzarella, partially frozen and grated
- 4 ounces cremini mushrooms, sliced
- 2 ounces broccolini florets
Finishing
- 1½ cups fresh arugula
- 1/3 cup shaved parmesan cheese
- microgreens, for garnish
- freshly ground black pepper, to taste
Instructions
- Prepare the pizza peel: Generously coat a pizza peel with cornmeal or semolina flour to prevent the dough from sticking and ensure the pizza slides off easily onto the pizza stone. Set aside.
- Preheat the oven and pizza stone: Place the pizza stone on the lower third rack of your oven and preheat to 500°F (260°C). Allow the stone to heat for at least 30 minutes to guarantee a crispy crust.
- Shape the dough: Transfer the pizza dough to a generously floured surface. Stretch it into a large pizza shape or divide it in half for two smaller pizzas. Be sure to leave a rim around the edge for the crust.
- Transfer the dough to the peel: Carefully move the shaped dough onto the prepared, dusted pizza peel.
- Add toppings: Evenly spread the chimichurri sauce over the center of the dough. Sprinkle most of the fresh and smoked mozzarella over the sauce, followed by the sliced cremini mushrooms and broccolini florets. Be careful not to overload the toppings to avoid slipping when transferring the pizza.
- Bake the pizza: Slide the pizza from the peel onto the preheated pizza stone. Bake for 6 to 9 minutes, or until the crust is golden, cheese has melted, and broccolini and mushrooms are tender. Rotate the pizza halfway through to ensure even baking.
- Finish and serve: Remove the pizza from the oven and slice. Top with fresh arugula, shaved parmesan, freshly ground black pepper, and microgreens. Serve immediately for the best flavor and texture.
Notes
- Preheating the pizza stone is essential to achieving a crisp, well-cooked crust.
- Partially freezing and grating the mozzarella cheeses help achieve a more even melt and better distribution on the pizza.
- Using less topping prevents the pizza from becoming soggy and ensures easy transfer onto the hot stone.
- You can divide the dough to make smaller pizzas, which are easier to handle and slide onto the pizza stone.
- Fresh microgreens add a vibrant, fresh flavor just before serving.
