  2. Make the Dough: In a large bowl, combine the Greek yogurt and self-rising flour. Stir initially with a spatula, then use your hands to mix and knead the dough about 20 times until it forms a soft ball that is not sticky but also not dry. If the dough feels too sticky, sprinkle in a bit more flour gradually.
  3. Shape the Biscuits: Transfer the dough onto a floured surface and flatten it into a 1-inch thick round disc. Use a 2.5-inch biscuit cutter or a floured glass to cut out biscuits. Repeat cutting until all dough is used. Alternatively, divide the dough into 10 even pieces and shape each by hand for a rustic look.
  4. Place on Baking Sheet: Arrange the cut biscuits on the prepared baking sheet, spacing them a few inches apart to allow for rising during baking.
  5. Bake Biscuits: Bake in the preheated oven for about 18 minutes or until the biscuits are golden brown on top and cooked through.
