Description

These Greek Turkey Burgers are a flavorful and healthy option loaded with Mediterranean herbs, spinach, feta cheese, and sun-dried tomatoes. Perfect for a quick weeknight dinner, they can be served in burger buns or atop salad greens for a nutritious meal.

  • 1 tablespoon avocado oil, plus 1-2 tablespoons more for cooking
  • 3 cups loosely packed fresh spinach
  • 1 teaspoon minced garlic
  • 1 pound 97% lean ground turkey
  • ½ teaspoon garlic powder
  • ½ teaspoon oregano
  • ½ teaspoon dried basil
  • ½ teaspoon Kosher salt, or to taste
  • ½ teaspoon ground black pepper
  • 1 large egg
  • ½ cup chopped sun dried tomatoes
  • ½ cup crumbled feta


Instructions

  1. Sauté Spinach and Garlic: In a large skillet over medium-high heat, add 1 tablespoon of avocado oil. Once hot, sauté the fresh spinach and minced garlic for about 3-4 minutes until the spinach has wilted. Remove from heat and transfer to a small bowl or plate to cool slightly.
  2. Prepare Burger Mixture: In a large bowl, add the ground turkey and sprinkle garlic powder, oregano, dried basil, Kosher salt, and black pepper evenly over it. Fold in the cooled sautéed spinach mixture. Then add the egg, stirring to combine, followed by the sun-dried tomatoes and crumbled feta. Use your hands to mix thoroughly until evenly combined.
  3. Form Patties and Chill: Scoop about ½ cup of the burger mixture per patty and shape into 4 large patties (or 6 smaller patties if desired). Place the formed patties on a baking sheet and chill in the refrigerator for 30 minutes to help them firm up.
  4. Cook Burgers: Heat 1-2 tablespoons avocado oil in a large skillet over medium-high heat or preheat a grill. Cook the burgers for 5-6 minutes on each side, or until the internal temperature reaches 165ºF (74ºC). Once cooked, allow the burgers to rest for 3-4 minutes before serving.

Notes

  • Make Ahead: The burger mixture can be prepared and chilled in the fridge up to one day in advance. Cover tightly with plastic wrap.
  • Storage: Leftover cooked burgers can be stored in an airtight container in the refrigerator for up to 4 days. Place parchment paper between patties to prevent sticking.
  • Freeze: Freeze shaped patties flat on a parchment-lined baking sheet for 1 hour, then transfer to a freezer bag and freeze for up to 2 months.
  • Reheat: Reheat burgers in a low oven at 300°F (150°C) for 10-12 minutes, or 15-20 minutes if reheating from frozen, until warmed through.
