Description

This Greek Lemon Chicken is a vibrant and flavorful dish made with tender chicken breasts marinated in a creamy blend of Greek yogurt, lemon juice, garlic, and Mediterranean spices. Perfectly seared in a skillet or on the grill, it’s a healthy and easy dinner option packed with zesty, herby goodness.

Ingredients

  • 4 boneless skinless chicken breasts
  • 1/4 cup olive oil
  • 5 garlic cloves, chopped
  • Juice of 1/2 lemon (about 2 tablespoons)
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon Greek seasoning
  • 1/4 cup Greek yogurt

Instructions

  1. In a mixing bowl, combine olive oil, chopped garlic, lemon juice, paprika, salt, black pepper, Greek seasoning, and Greek yogurt. Mix until smooth and well blended.
  2. Place chicken breasts in a resealable plastic bag or shallow dish. Pour marinade over the chicken and coat evenly. Seal or cover, and refrigerate for at least 30 minutes or overnight for best flavor.
  3. Remove chicken from the fridge and let sit at room temperature for 15–20 minutes before cooking.
  4. Heat a large skillet or grill pan over medium-high heat and add a drizzle of olive oil to prevent sticking.
  5. Place marinated chicken breasts in the hot pan. Cook for 4–5 minutes per side, or until a golden crust forms and internal temperature reaches 165°F (75°C).
  6. If needed, cover the pan with a lid or foil to help the chicken cook through without drying out.
  7. Remove chicken from the pan and let rest for a few minutes before slicing.
  8. Serve sliced with any extra yogurt marinade on the side for drizzling or dipping.

Notes

  • Marinate overnight for the most flavorful results.
  • Use a meat thermometer to avoid overcooking.
  • Great served with rice, roasted vegetables, or a fresh Greek salad.
  • Leftovers store well and can be used in wraps or salads.
