Description

These homemade Gluten-Free Chickpea Crackers are a nutritious and delicious alternative to store-bought wheat crackers. Made from fine gram flour (chickpea flour), flavored with dried thyme and olive oil, these crackers are crisp, savory, and perfect as a healthy snack or nibble. Ready in just 30 minutes, they are easy to make and naturally gluten-free.


Ingredients

Dry Ingredients

  • 180 g Fine Gram Flour (chickpea flour)
  • 2 tsp Dried Thyme
  • 1 tsp Salt

Wet Ingredients

  • 65 mL Extra Virgin Olive Oil
  • 65 mL Water (adjust as needed)


Instructions

  1. Preheat Oven and Prepare Baking Tray: Preheat the oven to 150°C (300°F) static mode and place a large baking tray inside to heat.
  2. Mix Dry Ingredients: In a mixing bowl, combine the gram flour, dried thyme, and salt thoroughly.
  3. Add Olive Oil: Pour in the extra virgin olive oil and use your fingertips to rub it into the flour mixture until it forms a crumbly dough texture.
  4. Incorporate Water: Gradually add water, starting with half the amount, while kneading the dough into a compact and pliable consistency. Adjust water as necessary depending on the flour texture.
  5. Roll Out Dough: Place the dough between two sheets of baking paper and roll it out evenly to a 2 mm thickness. Remember, thinner dough yields crispier crackers.
  6. Score and Dock Dough: Using a knife or a wheel cutter, mark the outline of individual crackers and gently poke the surface with a fork to allow steam to escape during baking.
  7. Bake the Crackers: Transfer the dough slab to the preheated baking tray and bake for 18-20 minutes. Rotate the tray halfway through baking for even cooking.
  8. Cool and Crisp: Once the top is firm and edges golden with a hollow sound when tapped, remove from the oven. Transfer crackers onto a wire rack and let them cool completely to achieve maximum crispiness.
  9. Store Properly: Store the cooled crackers in a glass container, jar, or tightly wrapped in foil. Avoid plastic storage to maintain crispiness. They keep well up to 5 days.
