Ingredients

For the Chicken Bowls
- 1 tbsp avocado oil
- 1 ½ cups broccoli florets
- Salt and pepper to taste
- 1 lb ground chicken
- 2 tbsp green onion, sliced
- 3 cups cauliflower rice, cooked (or steamed rice)
Instructions
- Prepare the Sauce: In a bowl, combine the coconut aminos, rice vinegar, chicken broth, blackstrap molasses, coconut sugar, garlic powder, ginger powder, arrowroot starch, salt, and pepper. Whisk the mixture thoroughly until smooth and set aside to let the flavors meld.
- Sauté the Broccoli: Heat 1 tablespoon of avocado oil in a large pan over medium heat. Add the broccoli florets and sauté for 4-5 minutes until they are lightly crisp and tender. Season with salt and pepper to taste, then remove from the pan and set aside.
- Cook the Ground Chicken: Using the same pan, add the ground chicken. Crumble it with a spatula as it cooks over medium heat. Continue cooking until the chicken is fully cooked and no longer pink. Lightly season with salt and pepper.
- Combine and Thicken Sauce: Return the cooked broccoli to the pan with the ground chicken. Pour the prepared sauce over the mixture and reduce the heat to low. Stir continuously until the sauce thickens and evenly coats the chicken and broccoli.
