Ingredients
Protein and Gnocchi
- 1 pound potato gnocchi, cooked according to the package and drained
- 1.5 pounds boneless, skinless chicken thighs (4-6 thighs), seasoned with salt and pepper to taste
- 1.5 teaspoon paprika
Dairy and Seasonings
- 5 tablespoons butter or ghee
- ½ cup half and half (or heavy whipping cream)
- ½ cup shredded mozzarella
Vegetables and Aromatics
- 1 medium yellow onion, diced
- 1 cup white mushrooms, diced
- 2 tablespoons minced garlic
- 1 teaspoon Italian seasoning
- 3 cups spinach
Liquids and Garnishes
- 1 cup chicken broth
- Red pepper chili flakes, shredded parmesan, and parsley, for serving
Instructions
- Season and Brown the Chicken: Season the chicken thighs with salt, pepper, and paprika. Melt 2 tablespoons of butter or ghee in a large skillet over medium-high heat. Add the chicken thighs and cook for about 5-10 minutes per side until golden brown. Transfer the chicken to a plate and set aside.
- Sauté Aromatics and Vegetables: Melt the remaining 3 tablespoons of butter in the skillet. Add the minced garlic and Italian seasoning, then add the diced onion and mushrooms. Sauté until the onion is translucent and mushrooms are tender, about 3-4 minutes.
- Create the Cream Sauce: Whisk in the chicken broth and heat for about 1 minute until hot. Gradually pour in the half and half while whisking continually. Stir in the shredded mozzarella and whisk for 2-3 minutes until the sauce is combined and beginning to thicken.
- Add Gnocchi and Spinach: Stir in the cooked potato gnocchi and spinach. Adjust seasoning with additional salt and pepper to taste.
- Simmer with Chicken: Return the chicken thighs to the skillet and let everything simmer together for about 2 minutes to warm the chicken through and meld the flavors.
- Garnish and Serve: Garnish with parsley, shredded parmesan, and red pepper chili flakes if desired. Serve immediately for a creamy, flavorful meal.
Notes
- Using boneless, skinless chicken thighs ensures the meat stays juicy and tender.
- If you prefer, substitute half and half with heavy whipping cream for an even richer sauce.
- Adjust the amount of red pepper flakes based on your spice preference.
- Fresh spinach wilts quickly; add it at the end to maintain its vibrant color and nutrients.
- Make sure to cook gnocchi according to package instructions to avoid mushy or undercooked gnocchi in the dish.
