Ingredients
Chicken Marinade
- 1 large boneless chicken breast, cubed
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp soy sauce
- 1 tbsp all-purpose flour
Eggs
- 2 large eggs
- Pinch of salt
Cooking
- 4 tbsp vegetable oil (divided)
- 2 tbsp minced garlic
- 1 tsp chili flakes
- 1/2 cup diced carrots
- 1/2 cup frozen peas
- 2 cups leftover cooked rice
- Salt to taste
- 1/2 tsp black pepper
- 1 tsp soy sauce
- 1 tsp sesame oil
- 2 tbsp chopped spring onion (for garnish)
Instructions
- Marinate The Chicken: In a large mixing bowl, combine the cubed chicken breast with 1/2 tsp salt, 1/2 tsp black pepper, and 1 tsp soy sauce. Add 1 tbsp all-purpose flour and mix thoroughly to coat each piece evenly. Set aside to marinate while preparing other ingredients.
- Scramble The Eggs: Crack 2 eggs into a small bowl, add a pinch of salt, and whisk until smooth. Heat 2 tbsp vegetable oil in a large frying pan over high heat. Pour in the eggs and let them firm up slightly before stirring gently to break into small curds. Remove the scrambled eggs from the pan and set aside on a plate.
- Cook The Chicken: Return the frying pan to high heat and add the remaining 2 tbsp vegetable oil. Sauté 2 tbsp minced garlic and 1 tsp chili flakes for about 30 seconds until fragrant.
