Description

These Garlic Buttered Peas are a quick and flavorful side dish made from frozen peas cooked directly in garlic butter. Bright green, tender, and coated in a rich, garlicky sauce, they’re perfect alongside any main course.


Ingredients

  • 50g / 3 tablespoons unsalted butter (or other oil/fat)
  • 2 garlic cloves, finely minced
  • 500g / 1 lb frozen peas
  • ½ teaspoon cooking/kosher salt
  • ½ teaspoon black pepper
  • 1 tablespoon water

Instructions

  1. Melt butter in a large saucepan over medium heat. Add minced garlic and cook for 30 seconds until light golden and fragrant.
  2. Add frozen peas, salt, pepper, and water. Increase heat to medium-high and cook for 5 minutes, stirring occasionally, until the water evaporates, the peas are hot, and coated in garlic butter.
  3. Transfer to a serving bowl and serve immediately.

Notes

  • Baby peas are sweeter and more tender than regular peas, but regular peas work fine.
  • Enhance flavor with finely chopped mint, a sprinkle of Parmesan, lemon zest or juice, or a pinch of cumin or coriander stirred into the butter.
  • Leftovers can be stored in the fridge for up to 4 days or frozen for 3 months.
