Ingredients
For the onions:
2 cups dry white wine
2–3 tablespoons olive oil
2 white onions, thinly sliced
½ teaspoon kosher salt
Freshly ground black pepper, to taste
For the potatoes:
2–3 tablespoons olive oil
6 medium yellow or red potatoes, sliced into ½-inch rounds
2 teaspoons beef bouillon paste
1 tablespoon kosher salt
1 tablespoon fresh thyme leaves
1 tablespoon fresh rosemary, roughly chopped
1½ cups shredded Gruyère cheese
Fresh chives, chopped (for garnish)
Flaky salt, to taste (for finishing)
Instructions
- Caramelize the onions: In a large skillet, combine sliced onions and white wine. Cook over medium-high heat for ~30 minutes, stirring occasionally, until wine evaporates. Add olive oil, salt, and pepper. Reduce heat and caramelize for ~1 hour, stirring occasionally until golden.
- Boil the potatoes: Preheat oven to 450°F (230°C). Heat olive oil on a baking sheet in the oven. In a pot, dissolve bouillon and salt in water. Add potato rounds and boil for 20 minutes until tender but intact. Drain well.
- Roast the potatoes: Place potatoes in a single layer on the preheated sheet. Season with thyme, rosemary, and flaky salt. Roast for 20–30 minutes, flipping halfway until crisp and golden.
- Add toppings: Top each roasted potato with caramelized onions and shredded Gruyère. Return to oven for 3–5 minutes to melt.
- Garnish and serve: Sprinkle with fresh chives and flaky salt. Serve warm.
