Description

This French Onion Beef and Rice skillet is a cozy, one-pan dinner inspired by the classic flavors of French onion soup. Made with ground beef, caramelized onions, rice, vegetables, and melted Gruyère cheese, it’s a hearty and comforting meal perfect for any night of the week.


Ingredients

  • 2 teaspoons avocado oil
  • 1 large yellow onion, sliced
  • 1 pound ground beef
  • 2 teaspoons garlic, minced
  • 1 teaspoon onion seasoning (or onion powder)
  • ½ teaspoon seasoned pepper (or black pepper)
  • 1 cup white long grain rice, uncooked
  • 2 cups beef stock
  • ¾ cup French Onion Skillet Sauce (or substitute with condensed French onion soup)
  • 1 cup frozen peas and carrots
  • 1 cup Gruyère cheese, shredded

Instructions

  1. Heat avocado oil in a large skillet over medium-high heat. Add sliced onion and cook, stirring occasionally, until golden brown and caramelized, about 20 minutes. Reduce heat and add more oil if onions begin to burn.
  2. Transfer onions to a plate. In the same skillet, add ground beef and cook until browned and crumbled. Drain excess fat.
  3. Add minced garlic, onion seasoning, and seasoned pepper to the beef. Cook for 30 seconds until fragrant.
  4. Add rice, beef stock, French onion skillet sauce, frozen peas and carrots, and caramelized onions. Stir to combine and bring to a boil.
  5. Reduce heat to low, cover, and cook for 18–20 minutes until the rice is tender and liquid is absorbed.
  6. Fluff the mixture with a spoon, stir in shredded Gruyère cheese, and serve warm.

Notes

  • If you don’t have French Onion Skillet Sauce, substitute with canned French onion soup or a mix of beef broth and caramelized onions for flavor.
  • Swap Gruyère with Swiss or mozzarella cheese if needed.
  • This dish reheats well and is great for leftovers or meal prep.
  • Caramelizing the onions slowly enhances the depth of flavor—don’t rush this step!
