Description

These fluffy vegan dinner rolls are soft, buttery, and easy to make by hand or with a stand mixer. Perfect as a side for any meal, they rise beautifully and bake up golden brown with a tender crumb that everyone will love.


Ingredients

  • 4 ½ cups all-purpose flour
  • 2 tablespoons instant dry yeast
  • 1/4 cup granulated sugar
  • 1 teaspoon salt
  • 1/4 cup + 1 tablespoon vegan butter, divided
  • 1 ½ cups unsweetened plain soy milk
  • 1 tablespoon melted vegan butter (for brushing)

Instructions

  1. In the bowl of a stand mixer fitted with a dough hook, combine 3 cups of flour, yeast, sugar, and salt.
  2. In a microwave-safe bowl, heat 1/4 cup vegan butter and soy milk for about 1 minute until the butter melts and the mixture reaches 105–110°F. Stir to combine.
  3. Pour the warm mixture into the dry ingredients and mix on low speed for 2 minutes. Scrape down the bowl.
  4. Add the remaining 1 1/2 cups of flour and knead on low for 2 minutes, then increase to medium and knead for 1 more minute until smooth. Knead in any dry flour by hand if needed.
  5. Transfer dough to a lightly oiled bowl, cover with a damp towel, and let rise in a warm spot for 30 minutes.
  6. Grease a 9×13-inch baking dish. Divide dough into 15 equal balls and place in the pan. Cover and let rise again for 30 minutes.
  7. Preheat oven to 375°F (190°C). Bake rolls for 18–20 minutes until golden brown.
  8. Remove from oven and immediately brush with remaining tablespoon of melted vegan butter. Serve warm.

Notes

  • Make sure yeast is fresh and within date for best results.
  • Soy milk should be warm (100–110°F) to activate yeast properly.
  • Kneading is essential for fluffy, well-textured rolls. Don’t skip it!
  • Let the dough rise in a warm, draft-free space for best proofing.
  • These rolls are best served fresh, but can be stored and reheated if needed.
