Instructions

  1. Soak Noodles: Place the rice noodles in a large bowl and cover with warm water. Let them soak for about 10 minutes or until softened. Drain and set aside.

  3. Cook Vegetables: Add julienned carrot, shredded cabbage, and snow peas to the wok. Stir-fry for 3-4 minutes until vegetables are tender yet crisp.
  4. Add Chicken: Stir in shredded cooked chicken and cook for an additional 2 minutes to combine flavors.
  5. Add Sauces and Pepper: Pour in the soy sauce, oyster sauce, and ground black pepper, stirring well to mix all ingredients.
  6. Add Broth and Noodles: Pour chicken broth into the wok and bring to a simmer. Add the drained noodles and gently toss with vegetables and chicken, allowing noodles to absorb liquid.
  7. Finish Cooking: Continue cooking and tossing the noodles for another 3-5 minutes until noodles are fully cooked and have absorbed all flavors.
  8. Serve and Garnish: Transfer pancit to a serving platter. Garnish with fresh cilantro or green onions and serve with lemon slices on the side.
