Instructions

  1. Preheat the oven: Set the oven temperature to 220°C (430°F) or fan 200°C (390°F) to prepare for baking the crackers.
  2. Make the dough: In a mixing bowl, combine the flour, salt, sugar, rosemary, olive oil, and warm water. Mix and knead until a soft and elastic dough forms.
  3. Divide the dough: Split the dough into two roughly rectangular portions. Cover one portion with a kitchen towel to prevent drying while you work on the first.
  4. Roll out the dough: On a lightly floured surface, roll out one dough portion to an even thickness of about 2-3mm (less than 1/8 inch).
  5. Add toppings: Sprinkle desired toppings such as sesame seeds, nigella seeds, caraway, black pepper, and coarse sea salt evenly over the dough. Gently roll over the toppings with the rolling pin to press them into the dough.
  6. Cut the crackers: Use a pizza cutter or sharp knife to cut the dough into squares, rectangles, or your preferred shapes.
  7. Dock the crackers: Prick each cracker a few times with a fork to prevent excessive puffing during baking. Transfer the crackers onto a lined baking sheet, placing them close together as they won’t spread much.
  8. Bake the crackers: Place the baking sheet in the oven and bake for 12 to 15 minutes. Begin checking at 10 minutes, then every minute after, until the crackers achieve a mix of light and dark golden brown and are baked to your preferred crispness.
  9. Cool and store: Remove the crackers from the oven, allow them to cool completely, then store in an airtight container to maintain freshness.
  10. Repeat with remaining dough: While the first batch bakes, roll out the second portion of dough and repeat the process to bake more crackers.
