Made with just five ingredients and no added sugar, these easy spicy drumsticks are a flavorful and simple weeknight dinner the whole family will love. Baked to perfection with a bold, spicy rub and ready in under an hour.
Ingredients
- 8 chicken drumsticks (medium, about 4 oz each)
- 2 tablespoons olive oil
- 1 teaspoon Diamond Crystal kosher salt (or ½ teaspoon of any other salt)
- 2 teaspoons chili powder
- ½ teaspoon cayenne pepper
- Optional: 2 tablespoons chopped parsley (for garnish)
- Optional: Pinch of red pepper flakes (for garnish)
Instructions
- Preheat the oven to 400°F (200°C). Line a rimmed baking sheet with high-heat-resistant parchment paper.
- Pat the chicken drumsticks dry with paper towels and arrange them in a single layer on the baking sheet.
- In a small bowl, mix olive oil, kosher salt, chili powder, and cayenne pepper to form a paste.
- Rub the spice paste all over the drumsticks using your hands or a pastry brush to ensure even coating.
- Bake the drumsticks for about 40 minutes, or until they reach an internal temperature of 165ºF and the juices run clear. Check at 30 minutes and loosely cover with foil if they’re browning too quickly.
- Garnish with chopped parsley and red pepper flakes, if desired. Serve hot or cold.
Notes
- Leftovers can be stored in an airtight container in the refrigerator for up to 4 days.
- Reheat in the microwave (covered) or in a 350°F oven (uncovered).
- Delicious served hot or cold—great for picnics!
