Quinoa Patty Ingredients

  • 1 cup fully cooked quinoa
  • 3 eggs
  • 1/2 cup broccoli florets (minced finely with kitchen scissors)
  • 1/2 cup shredded cheddar cheese (or mozzarella)

  • 1 tablespoon unsalted butter (or olive oil)


Instructions

  1. Mix Ingredients: Add all of the ingredients except the butter into a large bowl. Mix them thoroughly with a spoon until well combined, forming the quinoa patty batter.
  2. Heat Butter in Skillet: Place the butter in a large nonstick or cast-iron skillet over medium heat. Allow the butter to melt and warm up, preparing the pan for cooking the patties.
  3. Form and Cook Patties: Scoop about 1/4 cup of the quinoa batter for each patty and place it in the skillet, pressing down gently to form a disc approximately 1 inch thick. Cook for 3 minutes or until the bottom is lightly browned, then carefully flip using a spatula.
  4. Finish Cooking: Cook the flipped patties for an additional 3 to 4 minutes until golden brown and cooked through. Remove from heat and serve warm, or allow them to cool on a wire rack if storing for later.
  5. Oven-Baked Option: To bake instead of pan-frying, preheat the oven to 400°F (200°C). Coat a baking pan with nonstick spray, place patties on the pan, and bake for 12 to 16 minutes until lightly golden brown.
  6. Serving Suggestions: Serve the quinoa patties warm with your choice of ketchup, warmed pizza sauce, ranch dressing, salsa, or guacamole for added flavor.
