Ingredients

1¾ cups (220 g) all-purpose flour

1 teaspoon baking soda

¾ teaspoon salt

2 teaspoons ground cinnamon

¼ teaspoon ground ginger

¼ teaspoon ground nutmeg

¼ teaspoon ground allspice

2 large eggs, room temperature

1¼ cups (248 g) granulated sugar

1½ cups (341 g) pumpkin puree

8 tablespoons (113 g) butter, melted

¼ cup (57 g) milk


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. Whisk flour, baking soda, salt, cinnamon, ginger, nutmeg, and allspice in a bowl.
  3. In a large bowl, whisk eggs, sugar, pumpkin puree, melted butter, and milk until combined.
  4. Fold dry mixture into wet until just combined—do not overmix.
  5. Pour batter into loaf pan. Bake for 60 minutes or until a toothpick inserted comes out clean.
  6. Cool 10 minutes in the pan, then transfer to a wire rack to cool completely before slicing.
