Ingredients
- 1 cup unsalted butter, plus additional for buttering parchment
- 2 cups packed brown sugar
- 1/2 cup whole milk
- 1 teaspoon vanilla extract
- 3 1/2 to 4 cups sifted powdered sugar
- 1 1/2 cups coarsely chopped pecans, plus additional for topping if desired
Instructions
- Spray a 9×5 inch loaf pan with cooking spray and line with parchment paper. Set aside.
- Melt butter in a heavy-bottomed 2-quart saucepan over medium-low heat, stirring as needed.
- Add brown sugar and cook for 2 minutes, stirring constantly.
- Slowly pour in the milk while continuing to stir, then bring the mixture to a boil.
- Remove from heat and let the mixture cool for 30 to 40 minutes, until lukewarm or room temperature.
- Stir in vanilla extract.
- Gradually add powdered sugar, 1/2 cup at a time, stirring until thick and fudge-like in consistency.
- Stir in chopped pecans.
- Spoon the mixture into the prepared loaf pan and top with extra pecans if desired.
- Cover and let cool until firm, then cut into squares and store in an airtight container in the refrigerator.
