Ingredients

Peach Filling:

  • 5 peaches, cut into wedges
  • 125 g (1 cup) fresh raspberries
  • 75 g (½ cup) caster sugar

Cobbler Topping:

  • 90 g (½ cup) cold butter, salted or unsalted
  • 90 g (⅔ cup) caster sugar
  • 140 g (1 cup) plain flour
  • 1 teaspoon baking powder
  • 2 teaspoons milk
  • 2 tablespoons flaked almonds
  • Zest of 1 lemon


Instructions

  1. Preheat the Oven: Preheat your oven to 160°C for a fan oven or 170°C for a conventional oven to ensure it reaches the right temperature for even baking.
  2. Prepare the Fruit: Slice the peaches into chunky wedges and place them in a mixing bowl. Add the fresh raspberries and caster sugar, then gently toss to combine. Transfer this fruit mixture into an ovenproof baking dish, spreading it out evenly.
  3. Make the Cobbler Topping: In a large bowl, combine the plain flour, baking powder, and caster sugar. Rub the cold butter into the dry ingredients using your fingers until the mixture resembles coarse crumbs with some pea-sized butter pieces. Add the milk and mix gently until the dough comes together into a soft cookie dough-like texture. Stir in the lemon zest.
  4. Assemble the Cobbler: Spoon dollops of the cobbler topping evenly over the fruit filling in the baking dish. Sprinkle the surface with flaked almonds and optionally some demerara sugar for extra crunch and sweetness.
  5. Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the fruit is bubbly and juices are visible around the edges and the topping is golden brown and fluffy. Remove from the oven and allow to cool slightly before serving.
