  • 2 tablespoons olive oil (for cooking, divided)
  • 18 oz gnocchi
  • 7 oz kale, chopped (tough stalks removed)
  • 1 small lemon (juice of whole lemon + 1/2 teaspoon zest)
  • 4 oz goat cheese (+ extra for topping if desired)
  • 2 shallots, finely diced
  • 3 cloves garlic, minced
  • 1-2 tablespoons fresh mint leaves, chopped
  • Salt and pepper to taste


Instructions

  1. Brown the Gnocchi: Heat a wide, deep frying pan over medium heat and add 2 tablespoons olive oil. Add the gnocchi directly from the packet (no need to preboil) and toss to coat in oil. Let them cook undisturbed for about 2 minutes to brown the bottom. Then, continue turning the gnocchi every couple of minutes to brown all sides. The gnocchi does not need perfect browning as it will cook through. When browned, transfer to a plate and set aside.
  2. Sauté Shallots and Garlic: Return the pan to the heat and add a little more olive oil if needed. Add the finely diced shallots and minced garlic and cook briefly, stirring, until softened and fragrant but not browned.
  3. Cook the Kale: Add the chopped kale to the pan and stir fry until it brightens in color. Pour in half of the lemon juice, which will steam and soften the kale, causing it to reduce in volume.
  4. Add Cheese and Seasoning: Once the lemon juice has been absorbed, stir in the goat cheese, lemon zest, remaining lemon juice, and salt and pepper to taste. Mix well until the goat cheese melts and combines with the kale.
  5. Combine and Serve: Return the browned gnocchi to the pan and toss everything together until well combined. Garnish with additional goat cheese or chopped mint if desired, then serve immediately while hot.

  • No need to preboil your gnocchi; pan-frying straight from the packet gives a lovely crispy texture.
  • Use a wide, deep frying pan to allow easy stirring and cooking of all ingredients together.
