Description

Colorful and refreshing veggie wraps filled with hummus, crisp vegetables, tangy feta, and optional olives—all wrapped in whole wheat tortillas for a quick, satisfying Mediterranean-style meal.


Ingredients

4 large whole wheat wraps or tortillas

1 cup hummus (store-bought or homemade)

1 cup cherry tomatoes, halved

1 cup cucumber, thinly sliced

½ cup red bell pepper, thinly sliced

½ cup yellow bell pepper, thinly sliced

¼ cup red onion, thinly sliced

1 cup baby spinach or romaine lettuce

⅓ cup feta cheese, crumbled

¼ cup kalamata olives, sliced (optional)

2 tablespoons olive oil or lemon juice (optional)

Salt and black pepper, to taste


Instructions

  1. Slice all vegetables and prepare ingredients.
  2. Lay out tortillas and spread hummus over each one.
  3. Add layers of cherry tomatoes, cucumber, bell peppers, red onion, and greens.
  4. Top with feta, olives (optional), and season with salt and pepper.
  5. Drizzle with olive oil or lemon juice if desired.
  6. Fold in the sides and roll tightly from one end to form a wrap.
  7. Slice each wrap diagonally and serve immediately or wrap for later.
