Description

Ingredients

  • ¾ cup butter, softened
  • 1 cup brown sugar
  • 1 egg
  • ¼ cup molasses
  • 2¼ cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • ½ teaspoon ground cloves
  • ¼ teaspoon salt
  • ¼ cup granulated sugar, for rolling


Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large bowl, beat together the softened butter and brown sugar until light and fluffy.
  3. Add the egg and molasses to the butter mixture and beat until smooth, scraping down the sides as needed.
  4. In a separate bowl, sift together the flour, baking soda, cinnamon, ginger, cloves, and salt.
  5. Gradually mix the dry ingredients into the wet ingredients just until combined. Do not overmix.
  6. Roll the dough into tablespoon-sized balls and coat each ball in granulated sugar.
  7. Place cookies 2 inches apart on the prepared baking sheet.
  8. Bake for 8 to 10 minutes until the edges are set but the centers are still soft.
  9. Let cookies cool on the sheet for 5 minutes, then transfer to a wire rack to cool completely.
