Description

This bold and creamy garlic dressing is packed with fresh garlic flavor, tangy lemon, and Parmesan cheese. Perfect for garlic lovers looking to add a punch of flavor to salads, sandwiches, or roasted vegetables.


Ingredients

  • 6 fat cloves garlic
  • 2 tablespoons mayonnaise
  • 2 tablespoons red vinegar
  • Juice of 1 lemon
  • 1 teaspoon dijon mustard
  • 1/3 cup olive oil
  • 1/2 teaspoon dried oregano
  • 2 tablespoons freshly grated Parmesan
  • Salt and fresh cracked pepper, to taste

Instructions

  1. Mince the garlic finely and sprinkle with a bit of coarse salt. Using the back of a knife, mash the garlic into a paste by pressing and dragging repeatedly until smooth.
  2. In a small mixing bowl, combine the garlic paste, mayonnaise, and red vinegar.
  3. Squeeze the juice of 1 lemon into the bowl and add the dijon mustard. Whisk to combine.
  4. Add the olive oil, dried oregano, and Parmesan cheese. Whisk again until the dressing is smooth and creamy.
  5. Taste and season with salt and fresh cracked pepper. Adjust with more olive oil to mellow the flavor, or more lemon juice or vinegar for added tang.

Notes

  • Best enjoyed fresh, but can be stored in the fridge for up to 3 days in an airtight container.
  • Great as a dip, marinade, or sandwich spread in addition to salads.
