Ingredients
Main Ingredients
- 1 tablespoon olive oil
- 1/2 medium onion, chopped
- 3 sticks celery, finely chopped
- 3 large carrots, peeled and chopped or sliced
- 2 cloves garlic, minced
- 1/2 teaspoon Italian seasoning
- 8 cups chicken broth
- 2 cups shredded cooked or rotisserie chicken (or more, to taste)
- 2 (9 ounce) packages refrigerated cheese tortellini
- Salt and pepper, to taste
- Chopped parsley, to taste
Instructions
- Sauté Vegetables: Heat the olive oil in a large soup pot over medium-high heat. Add the chopped onion and sauté for 5-7 minutes until the onion becomes translucent and lightly browned.
- Add Celery, Carrots, Garlic, and Seasoning: Stir in the finely chopped celery, chopped carrots, minced garlic, and Italian seasoning. Cook for a few more minutes to soften and combine the flavors.
- Simmer with Broth: Pour in the chicken broth and increase heat to high. Once the mixture starts boiling, reduce to a rapid simmer and cook for 10 minutes or until the vegetables have softened to your liking.
- Add Chicken and Tortellini: Stir in the shredded chicken and cheese tortellini. Raise heat to medium-high and cook the soup for a few more minutes until the tortellini is tender and fully cooked, adjusting heat as needed to prevent a vigorous boil.
- Season and Serve: Taste and season the soup with salt and pepper as desired. Garnish with chopped parsley and serve immediately for a warm, comforting meal.
Notes
- Use rotisserie chicken for quick and easy preparation.
- Feel free to add additional vegetables such as spinach or zucchini for extra nutrition.
- If refrigeration is a concern, cooked chicken can be substituted with leftover chicken from another meal.
- This soup holds well for leftovers; store in an airtight container for up to 3 days.
- To reduce sodium, opt for low-sodium chicken broth and adjust seasoning accordingly.
