  • 2 (9 ounce) packages refrigerated cheese tortellini

Instructions

  1. Sauté Vegetables: Heat the olive oil in a large soup pot over medium-high heat. Add the chopped onion and sauté for 5-7 minutes until the onion becomes translucent and lightly browned.
  2. Add Celery, Carrots, Garlic, and Seasoning: Stir in the finely chopped celery, chopped carrots, minced garlic, and Italian seasoning. Cook for a few more minutes to soften and combine the flavors.
  3. Simmer with Broth: Pour in the chicken broth and increase heat to high. Once the mixture starts boiling, reduce to a rapid simmer and cook for 10 minutes or until the vegetables have softened to your liking.
  4. Add Chicken and Tortellini: Stir in the shredded chicken and cheese tortellini. Raise heat to medium-high and cook the soup for a few more minutes until the tortellini is tender and fully cooked, adjusting heat as needed to prevent a vigorous boil.
  5. Season and Serve: Taste and season the soup with salt and pepper as desired. Garnish with chopped parsley and serve immediately for a warm, comforting meal.
