Ingredients
1 lb fresh baby spinach
1 1/2 tbsp olive oil (or preferred cooking oil)
1/4 cup chopped onion
1 tbsp minced garlic
1/2 tsp freshly cracked black pepper
1/4 tsp salt (or to taste)
2 tsp fresh lemon juice
1/8–1/4 tsp red pepper flakes (optional)
Instructions
- Heat oil in a large pot over medium heat.
- Add onion and sauté for 2–3 minutes until translucent.
- Stir in garlic and cook for 1 minute until fragrant.
- Add spinach, salt, and pepper. Stir frequently for 4–5 minutes until just wilted. Remove from heat.
- Stir in lemon juice and optional red pepper flakes. Adjust seasoning to taste.
- Transfer spinach to a serving dish with a slotted spoon to drain excess liquid. Serve warm.
Notes
- Do not overcook spinach—remove from heat as soon as it wilts.
- Use a slotted spoon to avoid excess liquid when serving.
- Fresh baby spinach works best, but regular spinach can be used if stems are removed.
- Best enjoyed fresh—refrigerate leftovers up to 2 days, but freezing is not recommended.
