Description

Delicious Enoki Beef Rolls are a quick and flavorful weeknight dinner option featuring tender beef slices wrapped around fresh enoki mushrooms, cooked in a savory dashi-soy sauce and topped with lightly scrambled eggs. This dish offers a harmonious blend of umami flavors and comforting textures that are perfect served with steamed rice.

Ingredients

For the Beef Rolls

  • 1 pound Thinly Sliced Beef Ribeye or Sirloin
  • 8 ounces Enoki Mushrooms, fresh preferred
  • 1 medium Yellow Onion, can substitute with sweet onions or shallots
  • 2 large Eggs, optional; substitute with silken tofu for vegan

For the Sauce

  • 1/2 cup Dashi Broth, can substitute with chicken or vegetable broth
  • 3 tablespoons Soy Sauce, use low-sodium for a healthier option
  • 1 tablespoon Sugar, can substitute with honey or maple syrup
  • 1 pinch Black Pepper, adjust to taste

For the Garnish

  • 2 tablespoons Green Onion, chopped; can substitute with chives
  • Sesame Seeds, optional

Instructions

  1. Prepare Enoki Mushroom Bundles: Begin by dividing the enoki mushrooms into small bunches of three to four mushrooms each. Carefully wrap each bunch with a slice of beef and set aside for cooking.
  2. Mix the Sauce: In a small bowl, combine the dashi broth, soy sauce, sugar, and black pepper. Whisk well until the sugar dissolves completely to ensure a balanced sauce.
  3. Sauté Onions: Heat olive oil in a skillet over medium heat. Add the sliced yellow onion and sauté for 3 to 5 minutes, stirring occasionally, until the onions turn golden brown and fragrant.
  4. Cook Beef Rolls: Arrange the enoki beef rolls on top of the cooked onions in the skillet. Drizzle the prepared sauce evenly over the rolls. Cover the skillet and cook for 3 minutes, then flip each roll and cook for another 1 to 2 minutes to ensure even cooking.
  5. Scramble and Add Eggs: In a separate bowl, lightly beat the eggs. Pour the eggs over the beef rolls and allow them to simmer gently for 2 more minutes, stirring occasionally until the eggs are set but still tender. Remove from heat immediately to prevent overcooking.
  6. Garnish and Serve: Transfer the enoki beef rolls to a serving plate. Garnish with chopped green onions and optional sesame seeds. Serve hot alongside steamed rice for a complete meal.

Notes

  • Use low-sodium soy sauce to reduce salt content in the dish.
  • For a vegan version, substitute beef with thinly sliced tofu sheets and eggs with silken tofu.
  • Dashi broth can be replaced with vegetable or chicken broth if unavailable.
  • Be sure to slice beef thinly to allow for easy rolling and quick cooking.
  • Serve immediately for the best taste and texture.
