Description

CrockPot Chicken Spaghetti is a comforting slow-cooked dish combining tender shredded chicken breasts, creamy cheese, flavorful tomatoes, and perfectly cooked spaghetti noodles. Ideal for an easy and hearty meal, this recipe brings classic flavors into one creamy, cheesy casserole made effortlessly in your crockpot.

Ingredients

Sauce and Seasonings

  • 2 – 10.5 ounce cans cream of chicken soup
  • 4 ounces cream cheese, cut into chunks
  • 4 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 – 10 ounce can Rotel diced tomatoes with chiles, undrained

Protein

  • 1 ½ pounds chicken breast

Pasta

  • 10 ounces spaghetti

Cheese

  • 2 cups shredded cheese (Colby Jack preferred)

Instructions

  1. Prepare the sauce and seasonings: In the crockpot, combine cream of chicken soup, cream cheese chunks, minced garlic, onion powder, paprika, garlic powder, Italian seasoning, and the undrained Rotel diced tomatoes. Stir thoroughly to mix all the ingredients evenly.
  2. Add the chicken: Place the chicken breasts into the crockpot, ensuring they are fully covered by the sauce mixture. Cover the crockpot with the lid.
  3. Cook the chicken: Set the crockpot to low heat and cook for 4 to 5 hours, or until the chicken is completely cooked through and tender enough to shred.
  4. Cook the spaghetti: While the chicken is cooking, prepare the spaghetti according to the package instructions until al dente. Drain and set aside.
  5. Shred the chicken: Once cooked, remove the chicken breasts and shred them using two forks. Return the shredded chicken to the crockpot and mix it into the sauce.
  6. Add pasta and cheese: Stir the cooked spaghetti and shredded cheese into the crockpot mixture. Cover with the lid and allow it to sit for about 10 minutes to let the cheese melt.
  7. Season and serve: Add salt and black pepper to taste, stir well, and serve warm for a comforting and cheesy chicken spaghetti dish.

Notes

  • Cooking time may vary slightly depending on your slow cooker model.
  • For extra spice, add more diced green chilies or a dash of hot sauce.
  • Use any shredded cheese you prefer if Colby Jack is unavailable; mozzarella or cheddar work well.
  • If you want a thicker sauce, you can reduce the amount of cream of chicken soup or cook uncovered for the last 30 minutes.
  • Leftovers can be refrigerated for up to 3 days and reheated gently on the stovetop or microwave.
